Vegan kielbasa in rye blankets; sweet potatoe, turtle bean and collard salad with lime/chipotle vinaigrette


Vegan kielbasa (Tofurkey brand) in rye wrap blankets.
Sweet potato, turtle bean and collard salad with lime/chipotle vinaigrette (lime zest, lime juice, chipotle, evoo, flax oil, garlic, mustard, black pepper, sea salt).

Looks awesome! I'll bet your salad was delicious.

Last year, I made a sweet potato salad with a chipotle citrus sauce.. and it was delicious, but I made the mistake of adding asparagus.. oh my, it was horrible with that addition.

Rye blankets? I don't think they sell those around here. We're in the stone ages, it's bread and buns in the stores.

Thank, Neva. The rye blankets are just little rye wrap that they sell at the local health food store.

Thanks, Springsandwells. It was good. Collards and sweet ptatoes go so well together -- the colour, the flavours. The black bean were good, too, but I could have probably left them out.
