Onion and potato pierogy (store bought) with sundried tomato pesto (sundried tomatoes, tarragon, savory, sea salt, evoo, garlic, sea salt) over curried cabbage and mushrooms (cremini mushrooms, shredded green and purple cabbage, carrots, flat leaf parsley, turmeric, ginger, garlic, cumin, coriander, mustard, white vinegar chipotle, black pepper, evoo).

That looks SO good and colorful. I can never find vegan pierogies in my neck of the woods, and am too afraid to try making my own!

Thanks, Bazu! It's a bit time intensive. My local grocery carries vegan organic ones and -- so I'm usually too lazy to make them from scratch! :D
