Jerk portabellos, peppers, and spinach over brown rice and peas.


Jerk portabellos (evoo/flax oil, sea salt, tamari, cayenne pepper, pomegranate juice, allspice, cloves, coriander, cumin, paprika, black pepper, turmeric, ginger, vegan worcestershire sauce, star anise, cardamom), peppers and spinach (red, yellow and green peppers, vegetable stock, garlic) over brown rice and peas.

A soon as the photo loaded, I thought I was seeing octopus legs! I'm so happy those are portabellos! Looks yummy. I would not think to add pomegranate juice.

I love seeing all the healthy foods here, so that post for your daughter's birthday made me smile: cupcakes! Nice job!

Maple syrup... Now there's an idea for when I make jerk eggplant next week, heheheheh :p

Ariix, I'm not sure about the maple syrup and jerked eggplant... Agave might be more regionally appropriate. :)

Thanks, ATXVegan. I would have never thought about it either, but then I had some not so great jerked tofu recently and I thought, hmmmh, what could I use instead?

I was wondering, if it's not too much trouble, you could please stop hating on the maple syrup. Us Canadians like it, eh? If you just give it another chance, you may find that you like it too. Your consideration in this matter would be greatly appreciated.
