This sounds pretty good! I'm a big fan of red beans, sweet potatoes and peanut sauce (especially spicy). I've never had collards or plantains, but this dish looks fantastic. I've seen plantains at the store, but never had any idea what to do with them.
how do you cook this= it seemsa bit hard do you mix all the sauce ingreds together first and then just sauteed everythign and add at the end? how about publishing a cookbook?

this looks great! i always want to try plantains, but i never do. this may just have inspired me to try them!
I'm afraid to try plantains. They look so much like bananas, which I don't like. Otherwise, this dish sounds delish! As usual.
