Roasted red potato and kale salad (red onion, garlic, lemon juice, evoo/flax oil, sea salt, liquid smoke). Roasting greens is a great way to add to their flavour (especially kale, collards and romaine). This dish combines a lot of wonderful roast flavours (red onion and potato, especially).

I've never thought to roast greens, it sounds great! I've found that pretty much everything tastes better roasted.
I can say that it is fantastic. I tried this dish with my girlfriend the other night. I had to come back and compliment on what a fantastic dish this really is.

kale can be really 'veggie tasting'. i'd bet roasting kale would very much improve its flavor.
