Vegan cheese grits with red lentils, roasted cherries and collard greens
Grits with red lentils, roasted cherries and collard greens (yellow corn meal, vegetable stock, white vinegar, garlic, ginger, turmeric, nutritional yeast, sea salt).
Some old-fashioned comfort food, with a weird gourmet twist (roasted cherries). The cherries definitely added some sour flavour. A ribbon of pomegranate molasses might have been just as good.

White bean, coconut and oyster mushroom burger on a beer kaiser with roasted brussels sprouts
White bean, coconut and oyster mushroom burger (nama shoyu, nutritional yeast, white kidney beans, dessicated coconut, vegetable stock, sea salt, black pepper, rosemary, liquid smoke) on a beer kaiser (beer, in this case, tuborg, baking powder, evoo, sea salt) with roasted brussels sprouts (white vinegar, garlic, sea salt, liquid smoke).
Because of the coconut, the outside of the burger gets nice and crunchy. In some respects, this is more like a breaded faux chicken sandwich than a burger per se. Garnished with sundried tomatoes and arugula.

No-meat loaf (red lentils, green lentils, black lentils, yellow split peas, tarragon, sage, savory, all spice, oregano, basil, rosemary, marjoram, thyme, liquid smoke, evoo/flax oil, garlic, vidalia onion, sundried tomatoes, cremini mushrooms, whole wheat flour, baking powder) with mashed potatoes (macadamia butter, garlic, rice wine vinegar, sea salt), collards and raisins (liquid smoke, sea salt, rice wine vinegar) and mushroom gravy (porcini mushrooms, vegan red wine, garlic, herbs de Provence).

Rhubarbecue tofu with porcini/vidalia duxelles, butternust squash and coconut mash and chipotle peanut collards in a saffron broth
Rhubarbecue tofu (rhubarb, chili, cumin, black pepper, sea salt, orange juice, agave nectar, vegan white wine, cider vinegar, garlic) with porcini/vidalia duxelles (thyme, vegan red wine, vegetable stock, evoo/flax oil).
Butternust squash and coconut mash (allspice, cardamom, nutmeg, sea salt, palm oil).
Chipotle peanut collards (garlic, vegetable stock, lemon juice, palm oil) in a light saffron broth (vegetable stock and saffron).
With a little baguette at the end, the broth didn't go to waste. Next time, I'll replace the cider vinegar and agave with molasses and white vinegar just to give the whole rhubarb a little more flavour depth.

Grits with ribboned collards and red potatoes in a red pepper and yellow tomato sauce.
Grits (cornmeal, sea salt, green chili) with ribboned collards and red potatoes in a red pepper and yellow tomato sauce (vegetable stock, vegan white wine, sea salt, chipotle, liquid smoke, apple cider vinegar). I steamed the potatoes and collards while the sauce itself.
The sauce was:
1 yellow tomato diced.
3 red peppers diced.
1 cup vegetable stock
1/4 white wine
1/4 wine vinegar
Dash of liquid smoke
Chipotle, sea salt and herbs de Provence to taste.
Cook till reduced by roughly half and then blend with an immersion blender.
