All made without animal slavery!

Vegan macaroni and cheese (nutritional yeast, tahini, evoo/flax oil, turmeric, lemon juice, black pepper, sea salt, garlic) with sauteed vegetables (kale, carrots, green beans, onions, celery, brown rice macaroni).


Vegan macaroni and chees with sundried tomatoes, mushrooms and spinach (evoo/flax oil, nutritional yeast, tahini, cayenne pepper, turmeric, white vinegar, evoo/flax oil, whole wheat flour, sea salt, garlic, tarragon, savory, brown rice macaroni).

Roasted, pickled and sauteed vegetables with arugula greens and brown rice

Roasted, pickled and sauteed vegetables (zucchini, sundried tomatoes, artichokes, cremini mushrooms, arugula, nutritional yeast, sea salt, mustard, white vinegar, oregano, basil, black pepper, cayenne pepper) arugula and brown rice (evoo, sea salt).

With this dish, I roasted the vegetables, left them over night to marinate and then sauteed them with the arugula.

Roasted potatoes, asparagus, sundried tomatoes and portabello mushrooms with a dulse and vinegar gravy


Roasted potatoes, asparagus and portabello mushrooms (sea salt, garlic evoo/flax oil) with a dulse and vinegar gravy (dulse flakes, white vinegar, sea salt, garlic).

This is a very simple dish, easy to make, relying primarily on the natural flavours of the ingredients. The dulse also makes for a very nice purple accent. A nutritional yeast gravy would have been just as good.

Vegan tourtière with chick peas, caramelized vidalia onions, portabello mushrooms, and spinach w/sundried tomato and vegan cheese sauce


Vegan tourtière (spelt flour, vegan margarine, sea salt) with chick peas, caramelized vidalia onions, portabello mushrooms, and spinach (sea salt, tamari, vegan sugar, garlic, lemon juice, ginger, herbs provençal) w/sundried tomato and vegan cheese sauce sauce (vegetable stock, white vinegar, sea salt, nutritional yeast).

For this dish, I sautéed the vegetables, tossed them with the chick peas grounds with tamari, lemon and garlic, and then baked them in the par-baked crust.

Chick pea and maitake mushroom burger (vegetable stock, nutritional yeast, tahini, garlic, ginger, coriander, cumin, chili flakes, black pepper, vegan worchestershire sauce) on a spelt kaiser (spelt flour, yeast, sea salt) with sundried tomatoes and cilantro with a side of roasted green beans (evoo/flax oil, sea salt, nutritional yeast).

Brown rice spaghetti with minced collards, sundried tomatoes and dulse

This is a very quick and nutritious vegan pasta sauce, rich in calcium and iron.

1 tablespoons of extra virgin olive oil (I use a combination of evoo and flax oil)
3 collard leaves, chopped
1/2 cup of sundried tomatoes, chopped
1/2 cup of of dulse, chopped
1 tablespoon of lemon juice
1 dash of liquid smoke (optional)
1 tablespoon of minced garlic
2-4 tablespoons of nutritional yeast
Sea salt to taste.

Warm the oil, add the garlic and sauteé for two minutes on medium to medium-high heat, add the rest of the ingredients (except the nutritional yeast) and sauteé until the collards are wilted and the dulse and sundried tomatoes are reconstituted (should be about five minutes). Toss with nutritional yeast. Serve over the pasta.

A good vegan wine pairing might be D'Arenberg's "D'Arry's Original" or another vegan shiraz to complement the full flavour of the collards and sundried tomatoes.

1 cup of amaranth
1 cup of water
2 cups of vegetable stock
1/4 - 1/2 cup of nutritional yeast
1 tablespoon white vinegar
1 tablespoon of evoo
1 cup chopped sundried tomatoes
1 tablespoon turmeric
1 tablespoon minced garlic
1/2 teaspoon of minced ginger
Sea salt and black pepper to taste

More camping and vegan shells 'n' cheese.


It was relatively warm and sunny last weekend for camping. The season's almost over up here, and I was pretty cold in the early morning hours!

Dinner was no problem, though. I made fire-cooked brown rice and wild rice shells with mushrooms, kale and sun-dried tomatoes (sea salt, lemon juice, liquid smoke) in a white, vegan cheese sauce (evoo, garlic, white flour, turmeric, white vinegar).

White bean, coconut and oyster mushroom burger (nama shoyu, nutritional yeast, white kidney beans, dessicated coconut, vegetable stock, sea salt, black pepper, rosemary, liquid smoke) on a beer kaiser (beer, in this case, tuborg, baking powder, evoo, sea salt) with roasted brussels sprouts (white vinegar, garlic, sea salt, liquid smoke).

Because of the coconut, the outside of the burger gets nice and crunchy. In some respects, this is more like a breaded faux chicken sandwich than a burger per se. Garnished with sundried tomatoes and arugula.

I went camping this last weekend and I only had to prepare one dinner -- so I chose couscous because it was easy to bag up, and then you just dump everything (whole wheat couscous, powdered portabello mushrooms, figs, sundried tomatoes, raisins, sesame seeds, peanuts, cashews, crumbled vegetable bullion, sea salt, tarragon, turmeric, garlic, onion powder, cumin, ginger, allspice, cardamom) in boiled water, stir thoroughly and let it soak.

I've include a shot of my tent (the Gemini 2 from MEC). It was great! It was 5 minutes to set up and then it poured rain on Saturday, but I stayed dry.
